Meyer Lemon Curd

Today's task was lemon curd. I am making it as a gift for a culinary friend. It is Meyer lemon curd made with the Meyer lemons from my backyard:

1/2 cup lemon juice
1/3 cup sugar
6 TB butter
a pinch of salt
2 Egg Yolks
2 Eggs
Stir it all together in a double boiler and cook slowly until thick. Delicious- Tart and Rich ...and Easy!


  1. Sounds great! I'll try this soon, what would you recommend serving with this? Baked goods, toast, something else?

  2. yep! That is perfect. Great on sugar cookies too!
